Monica's Asian Teriyaki Lettuce Wraps
Ingredients for 4 to 6 people:
1. Romaine Lettuce or Green Leaf lettuce (5 oz), preferred brand by Fresh Attitude
2. Teriyaki Sauce (Mr. Yoshida's Sweet Teriyaki Sauce)
3. Fresh Carrots (match stick) (16oz), Publix brand
4. Fresh Red Bell Pepper (large)
5. Chicken Breast (2lb pack boneless, skinless)
Preparation:
As a MOM and my fellow MLM, I like to use my crock pot from time to time. So after kiddies are on the bus or down for a nap, Let's get started!!! only five minutes prep or less...
Rinse and dry your chicken breast. Toss them in the crock pot adding about 2 cups of water (chicken broth, optional) and 1/2 cup of Mr. Yoshida's Sweet Teriyaki Sauce. I turn my crock pot on HiGH if I am going to be home and the chicken is cooked in two to three hours. If I am away, I put my crock pot on LOW and let it cook to I get back home. However, follow the directions of your crock pot :)
Any hoo, sit down, do chores, or go to work because the hardest part is over.....Welllllll, Are you back home yet??? Did the aroma from your kitchen make your nose tickle? I am sure your hungry so, let's finish what we started! Take a big spoon w/ draining holes and transfer your chicken to a bowl. Add 1/2 cup of Mr. Yoshida's teriyaki sauce to the bowl. Then you want to take a fork and break apart the chicken. Coarse salt and fresh ground pepper to taste. It should fall apart real easy. Grab your bag of carrots, red bell pepper, and Mr. Yoshida's sauce from the fridge. Julienne (slice) red bell pepper and set it aside in a bowl...Remember I said presentation is key!!! Well, you can find cute/decorative Oriental boxes (hobby lobby). Three boxes will do it! Finally, line the boxes w/ foil... Place the shredded chicken in one, Dump your bag of carrots in one and the sliced red bell pepper in the other. Spread your Romaine lettuce/green leaf lettuce on a plate centered with a small bowl of the teriyaki sauce. Please note, a dollie tray can be a cute presentation idea too!
Super Easy, Simple, and Healthy. Call the gang because your done! Big and little kids love this one because it is self-serve and fun to make the wraps! Suggested sides: fried vegetable rice, spring rolls and fortune cookies (it is okay to cheat and pick these up from you local asian spot)...only a few bucks and no sweat ;)
Special note: I always make the first one so, others will see how it is done :) Assemble by cupping one piece of lettuce in your hand while layering in the shredded chicken, sprinkle carrots and bell pepper, and drizzle teriyaki sauce. Enjoy!

Substitute veggies to your preference. Sautéed mushrooms are awesome in these wraps!
